Audacity Tutorial For Podcasters It's a step-by-step guide to making voice recordings with Audacity. Each step has its own narrated video, so you can watch how it's done and hear the explanation.
That page is itself part of a step-by-step guide. The previous page (linked off that one) helps you download and install Audacity, and the guide continues with ID3 tag instructions.
It's pretty cool. If you need help learning the ropes, it looks like a very good place to start.
